Bulldog Margarita (our latest favorite!)

Ingredients

  • 4 c. ice
  • 2/3 c. lime juice
  • 1 c. tequila
  • 1/4 c. Cointreau or other orange liqueur
  • 4 tbsp. sugar
  • Coarse salt, for rim
  • 4 Coronitas (7 oz. each)
  • Skewers topped with sliced citrus, for garnish

Directions

  1. Combine ice, lime juice, tequila, Cointreau and sugar in a blender, pulsing to combine.
  2. Place salt on a shallow plate. Dip the rim of each glass in lime juice or water, then in the salt.
  3. Fill each glass with margarita mixture. Pop the caps off of the Coronita bottles, then flip each one upside-down into the margarita glass. (A little beer will empty into the cup, but once the neck of the bottle has sunk into the frozen margarita, it will stop pouring out.)
  4. Garnish each with a fruit skewer and serve.

La Paloma Margarita

Ingredients

  • 1½ oz. Don Julio Reposado Tequila
  • 4 oz. grapefruit soda
  • 1 wedge lime

Directions

  1. Add Don Julio Reposado Tequila and grapefruit soda in salt-rimmed, ice-filled highball glass.
  2. Garnish with lime wedge.

Perfect Cuervo Margarita

Ingredients

  • 1 ounce(s) Jose Cuervo Especial
  • 3 ounce(s) Jose Cuervo Lime Margarita Mix
  • 1 wedge(s) lime
  • 1 teaspoon(s) salt

Directions

  1. Rub rim of a chilled margarita glass with half a lime.
  2. Dip into salt to coat.
  3. In a shaker with ice, add José Cuervo Especial and José Cuervo Lime Margarita Mix.
  4. Shake vigorously.
  5. Strain into the margarita glass.
  6. Garnish with lime wedge.

Cucumber-Jalapeno Margarita

Ingredients

  • Coarse sea or kosher salt
  • 1 lime wedge
  • 1/2 cup(s) peeled, finely diced cucumber, plus a cucumber slice for garnish
  • 4 slice(s) (or up to 6 slices; thin) jalapeño, with seeds
  • 1/4 cup(s) cilantro sprigs
  • 3/4 ounce(s) (1 1/2 tablespoons) fresh lime juice
  • 1/4 ounce(s) (1 1/2 teaspoons) light agave nectar
  • 2 ounce(s) (1/4 cup) 100-percent blue agave silver tequila
  • 1/2 ounce(s) (1 tablespoon) Cointreau or triple sec

Directions

  1. Pour an even layer of salt on a plate. Rub the rim of an 8-ounce rocks glass or tumbler with lime wedge and invert glass into salt to coat rim.
  2. Combine cucumber, jalapeño, cilantro, lime juice, and agave nectar in a 2-cup cocktail shaker. Using a muddler or pestle, gently muddle mixture.
  3. Fill the shaker halfway with ice, then add tequila and Cointreau. Cover and shake well until shaker is frosty and cold.
  4. Fill prepared glass with ice. Strain margarita into it and garnish with the cucumber slice.

Leave it to the fine people at Delish to provide us with sumptuous recipes for any occasion. As we celebrate Earth Day 2015 during the last full week of April, Delish encourages us to “Go Green” with a list of leafy and delicious recipes to enjoy!

We don’t feature salad recipes often on Peter Salerno Inc.’s official blog, but this one was too interesting and enjoyable to pass up. It’s a bold and refreshing Spinach and Nectarine Salad recipe, and it’s sure to provide a refreshing twist on your classic spinach salad.

Originally contributed by Kate Mathis to Delish, this Spinach and Nectarine Salad combines recognizable spinach salad elements (olive oil, balsamic vinegar, baby spinach) with zesty, refreshing twists (orange marmalade, nectarines). Ingredients

2 tbsp. orange marmalade
1 large shallot
2 tbsp. white balsamic vinegar
2 tsp. olive oil
0.25 tsp. salt
0.25 tsp. ground black pepper
0.25 c. slivered almonds
1 package baby spinach
2 ripe nectarines

Preparation

  • In microwave-safe small bowl or 1-cup liquid measuring cup, combine marmalade and shallot. Cover with vented plastic wrap and cook in microwave on High 1 minute. Stir in vinegar, oil, 1/4 teaspoon salt, and 1/4 teaspoon ground black pepper.
  • In small skillet, cook almonds on medium 5 minutes, stirring until toasted. Set aside to cool, about 2 minutes.
  • To serve, toss spinach, nectarines, and marmalade mixture until combined. Place on 2 dinner plates; scatter almonds on top.

Perfect Cuervo Margarita

Ingredients

  • 1 ounce(s) Jose Cuervo Especial
  • 3 ounce(s) Jose Cuervo Lime Margarita Mix
  • 1 wedge(s) lime
  • 1 teaspoon(s) salt

Directions

  1. Rub rim of a chilled margarita glass with half a lime.
  2. Dip into salt to coat.
  3. In a shaker with ice, add José Cuervo Especial and José Cuervo Lime Margarita Mix.
  4. Shake vigorously.
  5. Strain into the margarita glass.
  6. Garnish with lime wedge.

Sauza Tequila Strawberry Sparklers

Ingredients

  • 6 (parts) Sauza® Blue Silver 100% Agave Tequila
  • 2 (parts) DeKuyper® Strawberry Liquor
  • 1 bottle(s) rosé Champagne, chilled
  • 4 (parts) limeade
  • 1 pint(s) strawberries
  • 2 tablespoon(s) sugar
  • 1 wedged lime

Directions

  1. Wash, stem, quarter, and freeze strawberries for at least 1 hour (can be done the day ahead).
  2. Run a wedge of lime around the rim of your champagne flute and dip in a plate of sugar to coat rim (if desired). Repeat until all glasses are prepared. Place 3 frozen strawberries in the bottom of each prepared flute. Open Champagne and pour glasses approximately 2/3 of the way full.
  3. In a shaker filled with ice, combine tequila, limeade, and strawberry liquor. Shake. Add a squeeze of fresh lime if desired. Top each glass with the cocktail and serve immediately.

Whether  you’re looking for a sweet treat to please your loved ones and guests, or just a vibrant slice of dessert for yourself, this recipe is sure to be a hit in your newly redesigned summer kitchen. The ingredients are easy to find, the recipe is simple, and you’ll look like a famous dessert chef in no time!

Magnolia Bakery’s Blueberry Jamboree: Ingredients

Blueberry Topping

  • 1 1/2 cup(s) fresh blueberries
  • 1/4 cup(s) granulated sugar
  • 1/8 cup(s) brown sugar
  • 1 tablespoon(s) cornstarch
  • 1 1/2 teaspoon(s) cornstarch
  • 1 tablespoon(s) water
  • 1 1/2 teaspoon(s) water
  • 2 cup(s) fresh blueberries
  • 3/4 teaspoon(s) lemon zest

Crust

  • 3/4 cup(s) (1 1/1 sticks) unsalted butter
  • 2 cup(s) flour
  • 1 cup(s) toasted pecans, chopped

Filling

  • 2 cup(s) heavy cream
  • 1 pound(s) cream cheese, room temperature, cut into chunks
  • 2 cup(s) sifted confectioners’ sugar

Magnolia Bakery’s Blueberry Jamboree: Recipe

  1. Prepare blueberry topping: In a large pot combine 1 1/2 cups blueberries and both sugars.
  2. Place on stove on medium-high heat and stir constantly. Stir until sugar is combined and blueberries start to pop and come to a boil.
  3. Dissolve cornstarch in water. Add cornstarch/water mixture to the pot and stir until mixture becomes thick.
  4. Remove from the heat and stir in remaining blueberries, combining gently. Add in the lemon zest and continue to combine gently and fully.
  5. Cool to room temperature and refrigerate until ready to use.
  6. Prepare the crust: Melt butter and combine with flour and pecans.
  7. Butter a 9″ x 13″ rectangular glass dish and press crust into it. Bake at 325°F for about 15 minutes or until it just starts to lightly brown. Cool to room temperature.
  8. Prepare the filling and assemble: Whip heavy cream and set aside.
  9. Meanwhile, in a mixer bowl, beat together cream cheese and confectioners’ sugar. Fold whipped cream into cream cheese mixture until combined and then spread onto cooled crust.
  10. Top with a thin layer of blueberry topping, about 4 cups.
  11. Refrigerate for 1 hour or until set.
